What is White Tea?

White tea is young tea that is harvested, sun-dried, and minimally processed.

White tea ages naturally, adding depth and flavor. It pairs a light, easy-drinking sweetness with herbal undertones, creating a rich experience enjoyable all year round.




THE TEA

White tea from Fuding, in Fujian province, is generally considered amongst the best white tea in the world.
 
White Dew white tea has been picked after the summer growing season. Spring tea is expensive and sometimes too subtle, while summer tea can be a bit bitter. White Dew tea is picked after the hottest days of the year, when the leaves have a full, bold flavor, and the price rush of the spring is past.
 


JESSE'S REVIEW 
I'm a big white tea guy - not just because it ages and keeps getting better year after year, but because a session of white tea is the perfect mix of many things.
 
The first steeps are bright, sweet, and light. The middle steeps get into a nice herbal flavor and depth of body, all while remaining super easy-drinking.
 
This 2017 White Dew has big leaves which overflow the gaiwan when added dry, and shrink down to size when wet. I found myself making it for guests when they came over, and it always made for a very pleasant drinking experience, especially for people new to tea.

Some of my favorite tea from jessies tea house however the most recent bags have been a little more crumblely than before its still really amazing tea taste like honey 🍯

A really refreshing and light tea with a beautiful fragrance and herbal sweetness. The best way I can describe this tea is that it tastes like a no-sugar honeydew melon.
Light, crisp, and pleasant with a hint of sweetness. One of my favorite white teas to this day.
The only thing I had to learn to work around is that this tea in its loose leaf form is very "not-dense". The tea leaves are very open and wide already so they shrink when steeping rather than opening. And getting past the idea of putting literal twigs into a teapot took a bit to get used to.
But the flavor of this refreshing tea was very much worth it.
Now if only it came in cake form.
