What is Matcha?
Known as Mo Cha (ๆน่ถ๏ผin Chinese, Matcha is a tea powder made from ground-up whole leaf green tea. Traditionally drunk straight by dissolving the powder in a bowl and whisking, it can also be mixed with milk, coconut water, or other drinks.
To make matcha, green tea farmers hang specialized shades over huge areas of their farms to keep the trees from absorbing too much direct sunlight. By shading specific cultivars of tea trees, the resulting leaves and matcha are rich in antioxidants, with more amino acids and less bitterness than un-shaded tea.
The leaves are then ground repeatedly until reaching just the right grain size so that they dissolve easily and smoothly. Matcha is graded by color, flavor, and quality of grind.

Jesse? Chinese Matcha?
The journey to bringing Matcha to the teahouse has taken several years.
For the first few years of the Teahouse, even though I knew Chinese matcha was available and being sold in the West as โfakeโ Japanese Matcha, I still did not sell it.
First of all, I didnโt want to sell โfakeโ anything; but mostly I hesitated because I didnโt know as much about matcha as loose leaf tea, and I didnโt want to jump on a bandwagon without doing the same due diligence I do on all my other teas.
Over the years, two trips and their learnings made me change my mind and decide to start the matcha line.
The first was my trip to Guizhou in 2025, where I got to meet the farmers, see their farms and shading operations, and learn about the grinding and packing process. I saw how they separated the matcha into various grades based on the quality of the end product, and how their matcha production line looked on par with the best in Japan.
The second was my trip to Uji, Japan, in 2026 where I met Tanaka Sensei, a 16th Generation matcha shop owner. Through my Chinese-Japanese translator, when I asked him how he faced the challenge of balancing new trends (like matcha suddenly being so popular) with the tradition that brought him here, he showed me two characters of calligraphy: ๅฎ้: โMichi o mamoruโ - โDefend the Path.โ
Tanaka Sensei said that he keeps his focus on protecting the customs, quality control, and techniques that have allowed his shop to last from the times of the Shogun to now.
This made me think: What is the Jesse's Teahouse Path? What am I defending?
I felt that it was a combination of sourcing in person - going straight to the mountains - and providing transparency, quality, value, and education.
Basically, I should source the matcha to the same standards as my tea, share the culture, our tea farmers, and teamaking techniques. If I follow the path that has brought me here, I then just have to hope tea drinkers embrace the transparency and my attempt to do something new in the matcha space by doing transparently-sourced Chinese matcha.

Tea #2: Beigang Yellow Tea

What is Yellow Tea?
Yellow tea is probably the least common of the six major Chinese tea types, which include red, green, white, oolong, dark, and yellow.
Yellow tea is similar to green tea, but with an extra โMen Huangโ or โSmotheringโ step in the teamaking process.
After being picked, dried, and heated with a wok to โkill green,โ the tea leaves are then โsuffocatedโ in a low-oxygen, high-heat environment. This encourages distinct types of oxidization and fermentation that creates a sort of tangy, sweet flavor distinct to yellow tea.
This yellowing process also increases the natural development of L-Theanine and volatile organic compounds within the tea, leading to strong Cha Qi and fantastic scent.
It is this specialized step that makes yellow tea so uncommon - with only a few master โSuffocatorsโ left and even fewer areas known for yellow tea, finding a consistent supply while maintaining quality and value is a challenge for tea shops everywhere.

Weโve finally got a yellow tea on the shop!
For years, Iโve been looking to find a good yellow tea at the right mix of price and quality that would satisfy the many, many tea friends online asking for a yellow tea fix.
This Beigang Yellow Tea is that tea!
The flavor of Beigang Yellow is similar to green tea, but with a special tangy โdifferenceโ that makes it stand out. Similar to how lighter oolong teas can be like green tea โbut moreโ, this yellow tea also tastes like a green tea with a twist - though a different twist than oolong.
The flavor is sweet and smooth, with a bit of fermented funk and a fruity aftertaste. It combines the nice parts of a fragrant green tea with an extra twist of something extra that will be fun for experienced tea drinkers as well as people trying their first yellow tea.
For several years, I had many yellow tea samples, but I never committed to getting one for the site because they tended to be too expensive for how good they were. This yellow tea has โentry-levelโ pricing for a yellow tea, but the scent and flavor are, in my opinion, much better than entry-level quality.
Beigang, where the tea is from, is located in Hunan Province, and its yellow tea has been well known since the Tang Dynasty (618-907 AD). Grown at over 2000 meters of elevation, this teaโs famous fragrance has maintained its name in the Chinese tea world for over a thousand years.
Itโs the sort of thing I am glad to feature on the site and in the subscription tea club! Enjoy!
Tea #3: Sister Aiโs Chrysanthemum Shou Puโer
What is Chrysanthemum Shou (Cooked) Pu'er?
Pu'er is the wine of teas, meticulously picked and aged with each tea mountain having its own personality. True Pu'er is only grown in Yunnan, China, right on the border of Myanmar in the heart of Southeast Asia. It is drunk throughout Asia for its fantastic flavor and health properties.
Shou, or "cooked" pu'er has been put through a process that involves piling the leaves and turning the pile repeatedly to rapidly increase oxidation and fermentation. The resulting tea is dark, complex, and known to calm the stomach and aid digestion.
This tea combines the rich low notes of shou puโer with clean, fragrant high floral notes from wild chrysanthemums, hand-picked from the organic Tea Longevity Mountain in Guizhou province, from the same remote farm that grows the tea in our Guizhou sampler series.
THE TEA
Each box contains:
1 50g tea cake (7-10 sessionsโ worth of tea, ~2 oz)ย
This tea contains two ingredients: Sister Aiโs 2017 Everyday Shou Puโer Tea and wild Guizhou Chrysanthemums.
The tea:
Sister Aiโs cooked puโers are excellently balanced, with clean, earthy, dark flavors, and unmolested by fishy smells which can be a result of poor post-fermentation.
This shou is a good middle-of-the-road shou - a true โeverydayโ cooked puโer. Itโs not as rich as Duiduiโs 2010 Reserve, and not as funky as Yunqingโs 2013 Chen Xiang. It is crisp, clean, and while it comes out very dark in color, it retains an easy-drinking quality that can sometimes be hard to find from a tea type with so much post-fermented flavor.
These leaves come from wild trees between 100-300 years old, with extensive root systems that reach far for nutrients and surrounded by native plants that contribute to a special terroir, making Yunnan ancient tree tea some of the best in the world.
The chrysanthemums:
One of the most popular flower teas in China and around the world, chrysanthemums have been steeped alongside tea and other Chinese herbs for millennia.
In Chinese Traditional Medicine, they are believed to reduce inflammation and help balance Qi in the liver and lungs. Their TCM classification is โWei Hanโ or โSlightly Cold.โ
While this tea is not formulated as medicine and makes no medicinal claims, the pure fresh fragrance of the flowers alone is a worthy match to the dark richness of the shou puโer. Itโs the perfect combo of floral scent and deep flavor!

This ancient owl, from (DYNASTY), is an Jesseโs Teahouse exclusive, designed based on an ancient statue in (Museum, and product info here).
We poured our own molds and tried various glaze options to recreate the ancient feel of this lil guy.

As part of an effort to avoid AI art in our products, we have started to look at historical art and artifacts as a source for inspiration.
When we wanted to make our โWindโ box, this guy stood out immediately. I remember thinking, โI want that as a tea pet!โ
Many thanks to the original artist who designed him hundreds of years ago! I wonder what they might say if they knew how far their little bird has flown.

Chicken Tea Jar
Chickens are cute, but they generally make poor vessels for loose-leaf tea.
This guy is different! His head comes right off revealing a spacious, 80ml belly perfect for storing all sorts of loose leaf.
Made of Dehua white porcelain, the chicken tea jar comes with a lid of padded cloth, providing an airtight seal which keeps teas safe from oxygen and outside smells.
Make sure to rinse the jarโs inside and dry completely before use.

Itโs a chicken tea jar. We designed him to look like a chicken.
If you move him around through the air, his head stays locked forward, just like a real chicken. But that really wasnโt hard to do since heโs not a real chicken.
I asked the porcelain team to select only the derpiest clay for this project. I donโt know if they knew what I meant, or even made any changes at all. They just went kind of quiet and the conversation moved on. Still, I call the end product a success.
NOTE: The container has a water capacity of 80 ml. The amount of tea it can hold depends on the type of tea, but it is estimated to hold around 10โ20 g of loose-leaf tea.

What is Matcha?
Known as Mo Cha (ๆน่ถ๏ผin Chinese, Matcha is a tea powder made from ground-up whole leaf green tea. Traditionally drunk straight by dissolving the powder in a bowl and whisking, it can also be mixed with milk, coconut water, or other drinks.
To make matcha, green tea farmers hang specialized shades over huge areas of their farms to keep the trees from absorbing too much direct sunlight. By shading specific cultivars of tea trees, the resulting leaves and matcha are rich in antioxidants, with more amino acids and less bitterness than un-shaded tea.
The leaves are then ground repeatedly until reaching just the right grain size so that they dissolve easily and smoothly. Matcha is graded by color, flavor, and quality of grind.

Jesse? Chinese Matcha?
The journey to bringing Matcha to the teahouse has taken several years.
For the first few years of the Teahouse, even though I knew Chinese matcha was available and being sold in the West as โfakeโ Japanese Matcha, I still did not sell it.
First of all, I didnโt want to sell โfakeโ anything; but mostly I hesitated because I didnโt know as much about matcha as loose leaf tea, and I didnโt want to jump on a bandwagon without doing the same due diligence I do on all my other teas.
Over the years, two trips and their learnings made me change my mind and decide to start the matcha line.
The first was my trip to Guizhou in 2025, where I got to meet the farmers, see their farms and shading operations, and learn about the grinding and packing process. I saw how they separated the matcha into various grades based on the quality of the end product, and how their matcha production line looked on par with the best in Japan.
The second was my trip to Uji, Japan, in 2026 where I met Tanaka Sensei, a 16th Generation matcha shop owner. Through my Chinese-Japanese translator, when I asked him how he faced the challenge of balancing new trends (like matcha suddenly being so popular) with the tradition that brought him here, he showed me two characters of calligraphy: ๅฎ้: โMichi o mamoruโ - โDefend the Path.โ
Tanaka Sensei said that he keeps his focus on protecting the customs, quality control, and techniques that have allowed his shop to last from the times of the Shogun to now.
This made me think: What is the Jesse's Teahouse Path? What am I defending?
I felt that it was a combination of sourcing in person - going straight to the mountains - and providing transparency, quality, value, and education.
Basically, I should source the matcha to the same standards as my tea, share the culture, our tea farmers, and teamaking techniques. If I follow the path that has brought me here, I then just have to hope tea drinkers embrace the transparency and my attempt to do something new in the matcha space by doing transparently-sourced Chinese matcha.

Tea #2: Beigang Yellow Tea

What is Yellow Tea?
Yellow tea is probably the least common of the six major Chinese tea types, which include red, green, white, oolong, dark, and yellow.
Yellow tea is similar to green tea, but with an extra โMen Huangโ or โSmotheringโ step in the teamaking process.
After being picked, dried, and heated with a wok to โkill green,โ the tea leaves are then โsuffocatedโ in a low-oxygen, high-heat environment. This encourages distinct types of oxidization and fermentation that creates a sort of tangy, sweet flavor distinct to yellow tea.
This yellowing process also increases the natural development of L-Theanine and volatile organic compounds within the tea, leading to strong Cha Qi and fantastic scent.
It is this specialized step that makes yellow tea so uncommon - with only a few master โSuffocatorsโ left and even fewer areas known for yellow tea, finding a consistent supply while maintaining quality and value is a challenge for tea shops everywhere.

Weโve finally got a yellow tea on the shop!
For years, Iโve been looking to find a good yellow tea at the right mix of price and quality that would satisfy the many, many tea friends online asking for a yellow tea fix.
This Beigang Yellow Tea is that tea!
The flavor of Beigang Yellow is similar to green tea, but with a special tangy โdifferenceโ that makes it stand out. Similar to how lighter oolong teas can be like green tea โbut moreโ, this yellow tea also tastes like a green tea with a twist - though a different twist than oolong.
The flavor is sweet and smooth, with a bit of fermented funk and a fruity aftertaste. It combines the nice parts of a fragrant green tea with an extra twist of something extra that will be fun for experienced tea drinkers as well as people trying their first yellow tea.
For several years, I had many yellow tea samples, but I never committed to getting one for the site because they tended to be too expensive for how good they were. This yellow tea has โentry-levelโ pricing for a yellow tea, but the scent and flavor are, in my opinion, much better than entry-level quality.
Beigang, where the tea is from, is located in Hunan Province, and its yellow tea has been well known since the Tang Dynasty (618-907 AD). Grown at over 2000 meters of elevation, this teaโs famous fragrance has maintained its name in the Chinese tea world for over a thousand years.
Itโs the sort of thing I am glad to feature on the site and in the subscription tea club! Enjoy!
Tea #3: Sister Aiโs Chrysanthemum Shou Puโer
What is Chrysanthemum Shou (Cooked) Pu'er?
Pu'er is the wine of teas, meticulously picked and aged with each tea mountain having its own personality. True Pu'er is only grown in Yunnan, China, right on the border of Myanmar in the heart of Southeast Asia. It is drunk throughout Asia for its fantastic flavor and health properties.
Shou, or "cooked" pu'er has been put through a process that involves piling the leaves and turning the pile repeatedly to rapidly increase oxidation and fermentation. The resulting tea is dark, complex, and known to calm the stomach and aid digestion.
This tea combines the rich low notes of shou puโer with clean, fragrant high floral notes from wild chrysanthemums, hand-picked from the organic Tea Longevity Mountain in Guizhou province, from the same remote farm that grows the tea in our Guizhou sampler series.
THE TEA
Each box contains:
1 50g tea cake (7-10 sessionsโ worth of tea, ~2 oz)ย
This tea contains two ingredients: Sister Aiโs 2017 Everyday Shou Puโer Tea and wild Guizhou Chrysanthemums.
The tea:
Sister Aiโs cooked puโers are excellently balanced, with clean, earthy, dark flavors, and unmolested by fishy smells which can be a result of poor post-fermentation.
This shou is a good middle-of-the-road shou - a true โeverydayโ cooked puโer. Itโs not as rich as Duiduiโs 2010 Reserve, and not as funky as Yunqingโs 2013 Chen Xiang. It is crisp, clean, and while it comes out very dark in color, it retains an easy-drinking quality that can sometimes be hard to find from a tea type with so much post-fermented flavor.
These leaves come from wild trees between 100-300 years old, with extensive root systems that reach far for nutrients and surrounded by native plants that contribute to a special terroir, making Yunnan ancient tree tea some of the best in the world.
The chrysanthemums:
One of the most popular flower teas in China and around the world, chrysanthemums have been steeped alongside tea and other Chinese herbs for millennia.
In Chinese Traditional Medicine, they are believed to reduce inflammation and help balance Qi in the liver and lungs. Their TCM classification is โWei Hanโ or โSlightly Cold.โ
While this tea is not formulated as medicine and makes no medicinal claims, the pure fresh fragrance of the flowers alone is a worthy match to the dark richness of the shou puโer. Itโs the perfect combo of floral scent and deep flavor!

We poured our own molds and tried various glaze options to recreate the ancient feel of this lil guy.

As part of an effort to avoid AI art in our products, we have started to look at historical art and artifacts as a source for inspiration.
When we wanted to make our โWindโ box, this guy stood out immediately. I remember thinking, โI want that as a tea pet!โ

Chicken Tea Jar
Chickens are cute, but they generally make poor vessels for loose-leaf tea.
This guy is different! His head comes right off revealing a spacious, 80ml belly perfect for storing all sorts of loose leaf.
Made of Dehua white porcelain, the chicken tea jar comes with a lid of padded cloth, providing an airtight seal which keeps teas safe from oxygen and outside smells.
Make sure to rinse the jarโs inside and dry completely before use.

Itโs a chicken tea jar. We designed him to look like a chicken.
If you move him around through the air, his head stays locked forward, just like a real chicken. But that really wasnโt hard to do since heโs not a real chicken.
I asked the porcelain team to select only the derpiest clay for this project. I donโt know if they knew what I meant, or even made any changes at all. They just went kind of quiet and the conversation moved on. Still, I call the end product a success.
NOTE: The container has a water capacity of 80 ml. The amount of tea it can hold depends on the type of tea, but it is estimated to hold around 10โ20 g of loose-leaf tea.

Chicken Tea Jar
Chickens are cute, but they generally make poor vessels for loose-leaf tea.
This guy is different! His head comes right off revealing a spacious, 80ml belly perfect for storing all sorts of loose leaf.
Made of Dehua white porcelain, the chicken tea jar comes with a lid of padded cloth, providing an airtight seal which keeps teas safe from oxygen and outside smells.
Make sure to rinse the jarโs inside and dry completely before use.

Itโs a chicken tea jar. We designed him to look like a chicken.
If you move him around through the air, his head stays locked forward, just like a real chicken. But that really wasnโt hard to do since heโs not a real chicken.
I asked the porcelain team to select only the derpiest clay for this project. I donโt know if they knew what I meant, or even made any changes at all. They just went kind of quiet and the conversation moved on. Still, I call the end product a success.
NOTE: The container has a water capacity of 80 ml. The amount of tea it can hold depends on the type of tea, but it is estimated to hold around 10โ20 g of loose-leaf tea.

What is Matcha?
Known as Mo Cha (ๆน่ถ๏ผin Chinese, Matcha is a tea powder made from ground-up whole leaf green tea. Traditionally drunk straight by dissolving the powder in a bowl and whisking, it can also be mixed with milk, coconut water, or other drinks.
To make matcha, green tea farmers hang specialized shades over huge areas of their farms to keep the trees from absorbing too much direct sunlight. By shading specific cultivars of tea trees, the resulting leaves and matcha are rich in antioxidants, with more amino acids and less bitterness than un-shaded tea.
The leaves are then ground repeatedly until reaching just the right grain size so that they dissolve easily and smoothly. Matcha is graded by color, flavor, and quality of grind.

Jesse? Chinese Matcha?
The journey to bringing Matcha to the teahouse has taken several years.
For the first few years of the Teahouse, even though I knew Chinese matcha was available and being sold in the West as โfakeโ Japanese Matcha, I still did not sell it.
First of all, I didnโt want to sell โfakeโ anything; but mostly I hesitated because I didnโt know as much about matcha as loose leaf tea, and I didnโt want to jump on a bandwagon without doing the same due diligence I do on all my other teas.
Over the years, two trips and their learnings made me change my mind and decide to start the matcha line.
The first was my trip to Guizhou in 2025, where I got to meet the farmers, see their farms and shading operations, and learn about the grinding and packing process. I saw how they separated the matcha into various grades based on the quality of the end product, and how their matcha production line looked on par with the best in Japan.
The second was my trip to Uji, Japan, in 2026 where I met Tanaka Sensei, a 16th Generation matcha shop owner. Through my Chinese-Japanese translator, when I asked him how he faced the challenge of balancing new trends (like matcha suddenly being so popular) with the tradition that brought him here, he showed me two characters of calligraphy: ๅฎ้: โMichi o mamoruโ - โDefend the Path.โ
Tanaka Sensei said that he keeps his focus on protecting the customs, quality control, and techniques that have allowed his shop to last from the times of the Shogun to now.
This made me think: What is the Jesse's Teahouse Path? What am I defending?
I felt that it was a combination of sourcing in person - going straight to the mountains - and providing transparency, quality, value, and education.
Basically, I should source the matcha to the same standards as my tea, share the culture, our tea farmers, and teamaking techniques. If I follow the path that has brought me here, I then just have to hope tea drinkers embrace the transparency and my attempt to do something new in the matcha space by doing transparently-sourced Chinese matcha.

Tea #2: Beigang Yellow Tea

What is Yellow Tea?
Yellow tea is probably the least common of the six major Chinese tea types, which include red, green, white, oolong, dark, and yellow.
Yellow tea is similar to green tea, but with an extra โMen Huangโ or โSmotheringโ step in the teamaking process.
After being picked, dried, and heated with a wok to โkill green,โ the tea leaves are then โsuffocatedโ in a low-oxygen, high-heat environment. This encourages distinct types of oxidization and fermentation that creates a sort of tangy, sweet flavor distinct to yellow tea.
This yellowing process also increases the natural development of L-Theanine and volatile organic compounds within the tea, leading to strong Cha Qi and fantastic scent.
It is this specialized step that makes yellow tea so uncommon - with only a few master โSuffocatorsโ left and even fewer areas known for yellow tea, finding a consistent supply while maintaining quality and value is a challenge for tea shops everywhere.

Weโve finally got a yellow tea on the shop!
For years, Iโve been looking to find a good yellow tea at the right mix of price and quality that would satisfy the many, many tea friends online asking for a yellow tea fix.
This Beigang Yellow Tea is that tea!
The flavor of Beigang Yellow is similar to green tea, but with a special tangy โdifferenceโ that makes it stand out. Similar to how lighter oolong teas can be like green tea โbut moreโ, this yellow tea also tastes like a green tea with a twist - though a different twist than oolong.
The flavor is sweet and smooth, with a bit of fermented funk and a fruity aftertaste. It combines the nice parts of a fragrant green tea with an extra twist of something extra that will be fun for experienced tea drinkers as well as people trying their first yellow tea.
For several years, I had many yellow tea samples, but I never committed to getting one for the site because they tended to be too expensive for how good they were. This yellow tea has โentry-levelโ pricing for a yellow tea, but the scent and flavor are, in my opinion, much better than entry-level quality.
Beigang, where the tea is from, is located in Hunan Province, and its yellow tea has been well known since the Tang Dynasty (618-907 AD). Grown at over 2000 meters of elevation, this teaโs famous fragrance has maintained its name in the Chinese tea world for over a thousand years.
Itโs the sort of thing I am glad to feature on the site and in the subscription tea club! Enjoy!
Tea #3: Sister Aiโs Chrysanthemum Shou Puโer
What is Chrysanthemum Shou (Cooked) Pu'er?
Pu'er is the wine of teas, meticulously picked and aged with each tea mountain having its own personality. True Pu'er is only grown in Yunnan, China, right on the border of Myanmar in the heart of Southeast Asia. It is drunk throughout Asia for its fantastic flavor and health properties.
Shou, or "cooked" pu'er has been put through a process that involves piling the leaves and turning the pile repeatedly to rapidly increase oxidation and fermentation. The resulting tea is dark, complex, and known to calm the stomach and aid digestion.
This tea combines the rich low notes of shou puโer with clean, fragrant high floral notes from wild chrysanthemums, hand-picked from the organic Tea Longevity Mountain in Guizhou province, from the same remote farm that grows the tea in our Guizhou sampler series.
THE TEA
Each box contains:
1 50g tea cake (7-10 sessionsโ worth of tea, ~2 oz)ย
This tea contains two ingredients: Sister Aiโs 2017 Everyday Shou Puโer Tea and wild Guizhou Chrysanthemums.
The tea:
Sister Aiโs cooked puโers are excellently balanced, with clean, earthy, dark flavors, and unmolested by fishy smells which can be a result of poor post-fermentation.
This shou is a good middle-of-the-road shou - a true โeverydayโ cooked puโer. Itโs not as rich as Duiduiโs 2010 Reserve, and not as funky as Yunqingโs 2013 Chen Xiang. It is crisp, clean, and while it comes out very dark in color, it retains an easy-drinking quality that can sometimes be hard to find from a tea type with so much post-fermented flavor.
These leaves come from wild trees between 100-300 years old, with extensive root systems that reach far for nutrients and surrounded by native plants that contribute to a special terroir, making Yunnan ancient tree tea some of the best in the world.
The chrysanthemums:
One of the most popular flower teas in China and around the world, chrysanthemums have been steeped alongside tea and other Chinese herbs for millennia.
In Chinese Traditional Medicine, they are believed to reduce inflammation and help balance Qi in the liver and lungs. Their TCM classification is โWei Hanโ or โSlightly Cold.โ
While this tea is not formulated as medicine and makes no medicinal claims, the pure fresh fragrance of the flowers alone is a worthy match to the dark richness of the shou puโer. Itโs the perfect combo of floral scent and deep flavor!
๐ช๐บNote for EU customers: For some reason under EU law, it is much harder to import the pre-blended tea than to import tea and flowers separately. We poured our own molds and tried various glaze options to recreate the ancient feel of this lil guy.

As part of an effort to avoid AI art in our products, we have started to look at historical art and artifacts as a source for inspiration.
When we wanted to make our โWindโ box, this guy stood out immediately. I remember thinking, โI want that as a tea pet!โ

We poured our own molds and tried various glaze options to recreate the ancient feel of this lil guy.

Chicken Tea Jar
Chickens are cute, but they generally make poor vessels for loose-leaf tea.
This guy is different! His head comes right off revealing a spacious, 80ml belly perfect for storing all sorts of loose leaf.
Made of Dehua white porcelain, the chicken tea jar comes with a lid of padded cloth, providing an airtight seal which keeps teas safe from oxygen and outside smells.
Make sure to rinse the jarโs inside and dry completely before use.

Itโs a chicken tea jar. We designed him to look like a chicken.
If you move him around through the air, his head stays locked forward, just like a real chicken. But that really wasnโt hard to do since heโs not a real chicken.
I asked the porcelain team to select only the derpiest clay for this project. I donโt know if they knew what I meant, or even made any changes at all. They just went kind of quiet and the conversation moved on. Still, I call the end product a success.
NOTE: The container has a water capacity of 80 ml. The amount of tea it can hold depends on the type of tea, but it is estimated to hold around 10โ20 g of loose-leaf tea.

What is Matcha?
Known as Mo Cha (ๆน่ถ๏ผin Chinese, Matcha is a tea powder made from ground-up whole leaf green tea. Traditionally drunk straight by dissolving the powder in a bowl and whisking, it can also be mixed with milk, coconut water, or other drinks.
To make matcha, green tea farmers hang specialized shades over huge areas of their farms to keep the trees from absorbing too much direct sunlight. By shading specific cultivars of tea trees, the resulting leaves and matcha are rich in antioxidants, with more amino acids and less bitterness than un-shaded tea.
The leaves are then ground repeatedly until reaching just the right grain size so that they dissolve easily and smoothly. Matcha is graded by color, flavor, and quality of grind.

Jesse? Chinese Matcha?
The journey to bringing Matcha to the teahouse has taken several years.
For the first few years of the Teahouse, even though I knew Chinese matcha was available and being sold in the West as โfakeโ Japanese Matcha, I still did not sell it.
First of all, I didnโt want to sell โfakeโ anything; but mostly I hesitated because I didnโt know as much about matcha as loose leaf tea, and I didnโt want to jump on a bandwagon without doing the same due diligence I do on all my other teas.
Over the years, two trips and their learnings made me change my mind and decide to start the matcha line.
The first was my trip to Guizhou in 2025, where I got to meet the farmers, see their farms and shading operations, and learn about the grinding and packing process. I saw how they separated the matcha into various grades based on the quality of the end product, and how their matcha production line looked on par with the best in Japan.
The second was my trip to Uji, Japan, in 2026 where I met Tanaka Sensei, a 16th Generation matcha shop owner. Through my Chinese-Japanese translator, when I asked him how he faced the challenge of balancing new trends (like matcha suddenly being so popular) with the tradition that brought him here, he showed me two characters of calligraphy: ๅฎ้: โMichi o mamoruโ - โDefend the Path.โ
Tanaka Sensei said that he keeps his focus on protecting the customs, quality control, and techniques that have allowed his shop to last from the times of the Shogun to now.
This made me think: What is the Jesse's Teahouse Path? What am I defending?
I felt that it was a combination of sourcing in person - going straight to the mountains - and providing transparency, quality, value, and education.
Basically, I should source the matcha to the same standards as my tea, share the culture, our tea farmers, and teamaking techniques. If I follow the path that has brought me here, I then just have to hope tea drinkers embrace the transparency and my attempt to do something new in the matcha space by doing transparently-sourced Chinese matcha.

Tea #2: Beigang Yellow Tea

What is Yellow Tea?
Yellow tea is probably the least common of the six major Chinese tea types, which include red, green, white, oolong, dark, and yellow.
Yellow tea is similar to green tea, but with an extra โMen Huangโ or โSmotheringโ step in the teamaking process.
After being picked, dried, and heated with a wok to โkill green,โ the tea leaves are then โsuffocatedโ in a low-oxygen, high-heat environment. This encourages distinct types of oxidization and fermentation that creates a sort of tangy, sweet flavor distinct to yellow tea.
This yellowing process also increases the natural development of L-Theanine and volatile organic compounds within the tea, leading to strong Cha Qi and fantastic scent.
It is this specialized step that makes yellow tea so uncommon - with only a few master โSuffocatorsโ left and even fewer areas known for yellow tea, finding a consistent supply while maintaining quality and value is a challenge for tea shops everywhere.

Weโve finally got a yellow tea on the shop!
For years, Iโve been looking to find a good yellow tea at the right mix of price and quality that would satisfy the many, many tea friends online asking for a yellow tea fix.
This Beigang Yellow Tea is that tea!
The flavor of Beigang Yellow is similar to green tea, but with a special tangy โdifferenceโ that makes it stand out. Similar to how lighter oolong teas can be like green tea โbut moreโ, this yellow tea also tastes like a green tea with a twist - though a different twist than oolong.
The flavor is sweet and smooth, with a bit of fermented funk and a fruity aftertaste. It combines the nice parts of a fragrant green tea with an extra twist of something extra that will be fun for experienced tea drinkers as well as people trying their first yellow tea.
For several years, I had many yellow tea samples, but I never committed to getting one for the site because they tended to be too expensive for how good they were. This yellow tea has โentry-levelโ pricing for a yellow tea, but the scent and flavor are, in my opinion, much better than entry-level quality.
Beigang, where the tea is from, is located in Hunan Province, and its yellow tea has been well known since the Tang Dynasty (618-907 AD). Grown at over 2000 meters of elevation, this teaโs famous fragrance has maintained its name in the Chinese tea world for over a thousand years.
Itโs the sort of thing I am glad to feature on the site and in the subscription tea club! Enjoy!
Tea #3: Sister Aiโs Chrysanthemum Shou Puโer
What is Chrysanthemum Shou (Cooked) Pu'er?
Pu'er is the wine of teas, meticulously picked and aged with each tea mountain having its own personality. True Pu'er is only grown in Yunnan, China, right on the border of Myanmar in the heart of Southeast Asia. It is drunk throughout Asia for its fantastic flavor and health properties.
Shou, or "cooked" pu'er has been put through a process that involves piling the leaves and turning the pile repeatedly to rapidly increase oxidation and fermentation. The resulting tea is dark, complex, and known to calm the stomach and aid digestion.
This tea combines the rich low notes of shou puโer with clean, fragrant high floral notes from wild chrysanthemums, hand-picked from the organic Tea Longevity Mountain in Guizhou province, from the same remote farm that grows the tea in our Guizhou sampler series.
THE TEA
Each box contains:
1 50g tea cake (7-10 sessionsโ worth of tea, ~2 oz)ย
This tea contains two ingredients: Sister Aiโs 2017 Everyday Shou Puโer Tea and wild Guizhou Chrysanthemums.
The tea:
Sister Aiโs cooked puโers are excellently balanced, with clean, earthy, dark flavors, and unmolested by fishy smells which can be a result of poor post-fermentation.
This shou is a good middle-of-the-road shou - a true โeverydayโ cooked puโer. Itโs not as rich as Duiduiโs 2010 Reserve, and not as funky as Yunqingโs 2013 Chen Xiang. It is crisp, clean, and while it comes out very dark in color, it retains an easy-drinking quality that can sometimes be hard to find from a tea type with so much post-fermented flavor.
These leaves come from wild trees between 100-300 years old, with extensive root systems that reach far for nutrients and surrounded by native plants that contribute to a special terroir, making Yunnan ancient tree tea some of the best in the world.
The chrysanthemums:
One of the most popular flower teas in China and around the world, chrysanthemums have been steeped alongside tea and other Chinese herbs for millennia.

Pu'er is the wine of teas, meticulously picked and aged with each tea mountain having its own personality. True Pu'er is only grown in Yunnan, China, right on the border of Myanmar in the heart of Southeast Asia. It is drunk throughout Asia for its fantastic flavor and health properties.
Shou, or "cooked" pu'er has been put through a process that involves piling the leaves and turning the pile repeatedly to rapidly increase oxidation and fermentation. The resulting tea is dark, complex, and known to calm the stomach and aid digestion.
This tea combines the rich low notes of shou puโer with clean, fragrant high floral notes from wild chrysanthemums, hand-picked from the organic Tea Longevity Mountain in Guizhou province, from the same remote farm that grows the tea in our Guizhou sampler series.
THE TEA
Each box contains:
1 50g tea cake (7-10 sessionsโ worth of tea, ~2 oz)ย
This tea contains two ingredients: Sister Aiโs 2017 Everyday Shou Puโer Tea and wild Guizhou Chrysanthemums.
The tea:
Sister Aiโs cooked puโers are excellently balanced, with clean, earthy, dark flavors, and unmolested by fishy smells which can be a result of poor post-fermentation.
This shou is a good middle-of-the-road shou - a true โeverydayโ cooked puโer. Itโs not as rich as Duiduiโs 2010 Reserve, and not as funky as Yunqingโs 2013 Chen Xiang. It is crisp, clean, and while it comes out very dark in color, it retains an easy-drinking quality that can sometimes be hard to find from a tea type with so much post-fermented flavor.
These leaves come from wild trees between 100-300 years old, with extensive root systems that reach far for nutrients and surrounded by native plants that contribute to a special terroir, making Yunnan ancient tree tea some of the best in the world.
The chrysanthemums:
One of the most popular flower teas in China and around the world, chrysanthemums have been steeped alongside tea and other Chinese herbs for millennia.
In Chinese Traditional Medicine, they are believed to reduce inflammation and help balance Qi in the liver and lungs. Their TCM classification is โWei Hanโ or โSlightly Cold.โ
While this tea is not formulated as medicine and makes no medicinal claims, the pure fresh fragrance of the flowers alone is a worthy match to the dark richness of the shou puโer. Itโs the perfect combo of floral scent and deep flavor!

We poured our own molds and tried various glaze options to recreate the ancient feel of this lil guy.

Chicken Tea Jar
Chickens are cute, but they generally make poor vessels for loose-leaf tea.
This guy is different! His head comes right off revealing a spacious, 80ml belly perfect for storing all sorts of loose leaf.
Made of Dehua white porcelain, the chicken tea jar comes with a lid of padded cloth, providing an airtight seal which keeps teas safe from oxygen and outside smells.
Make sure to rinse the jarโs inside and dry completely before use.

Itโs a chicken tea jar. We designed him to look like a chicken.
If you move him around through the air, his head stays locked forward, just like a real chicken. But that really wasnโt hard to do since heโs not a real chicken.
I asked the porcelain team to select only the derpiest clay for this project. I donโt know if they knew what I meant, or even made any changes at all. They just went kind of quiet and the conversation moved on. Still, I call the end product a success.
NOTE: The container has a water capacity of 80 ml. The amount of tea it can hold depends on the type of tea, but it is estimated to hold around 10โ20 g of loose-leaf tea.

What is Matcha?
Known as Mo Cha (ๆน่ถ๏ผin Chinese, Matcha is a tea powder made from ground-up whole leaf green tea. Traditionally drunk straight by dissolving the powder in a bowl and whisking, it can also be mixed with milk, coconut water, or other drinks.
To make matcha, green tea farmers hang specialized shades over huge areas of their farms to keep the trees from absorbing too much direct sunlight. By shading specific cultivars of tea trees, the resulting leaves and matcha are rich in antioxidants, with more amino acids and less bitterness than un-shaded tea.
The leaves are then ground repeatedly until reaching just the right grain size so that they dissolve easily and smoothly. Matcha is graded by color, flavor, and quality of grind.

Jesse? Chinese Matcha?
The journey to bringing Matcha to the teahouse has taken several years.
For the first few years of the Teahouse, even though I knew Chinese matcha was available and being sold in the West as โfakeโ Japanese Matcha, I still did not sell it.
First of all, I didnโt want to sell โfakeโ anything; but mostly I hesitated because I didnโt know as much about matcha as loose leaf tea, and I didnโt want to jump on a bandwagon without doing the same due diligence I do on all my other teas.
Over the years, two trips and their learnings made me change my mind and decide to start the matcha line.
The first was my trip to Guizhou in 2025, where I got to meet the farmers, see their farms and shading operations, and learn about the grinding and packing process. I saw how they separated the matcha into various grades based on the quality of the end product, and how their matcha production line looked on par with the best in Japan.
The second was my trip to Uji, Japan, in 2026 where I met Tanaka Sensei, a 16th Generation matcha shop owner. Through my Chinese-Japanese translator, when I asked him how he faced the challenge of balancing new trends (like matcha suddenly being so popular) with the tradition that brought him here, he showed me two characters of calligraphy: ๅฎ้: โMichi o mamoruโ - โDefend the Path.โ
Tanaka Sensei said that he keeps his focus on protecting the customs, quality control, and techniques that have allowed his shop to last from the times of the Shogun to now.
This made me think: What is the Jesse's Teahouse Path? What am I defending?
I felt that it was a combination of sourcing in person - going straight to the mountains - and providing transparency, quality, value, and education.
Basically, I should source the matcha to the same standards as my tea, share the culture, our tea farmers, and teamaking techniques. If I follow the path that has brought me here, I then just have to hope tea drinkers embrace the transparency and my attempt to do something new in the matcha space by doing transparently-sourced Chinese matcha.

Tea #2: Beigang Yellow Tea

What is Yellow Tea?
Yellow tea is probably the least common of the six major Chinese tea types, which include red, green, white, oolong, dark, and yellow.
Yellow tea is similar to green tea, but with an extra โMen Huangโ or โSmotheringโ step in the teamaking process.
After being picked, dried, and heated with a wok to โkill green,โ the tea leaves are then โsuffocatedโ in a low-oxygen, high-heat environment. This encourages distinct types of oxidization and fermentation that creates a sort of tangy, sweet flavor distinct to yellow tea.
This yellowing process also increases the natural development of L-Theanine and volatile organic compounds within the tea, leading to strong Cha Qi and fantastic scent.
It is this specialized step that makes yellow tea so uncommon - with only a few master โSuffocatorsโ left and even fewer areas known for yellow tea, finding a consistent supply while maintaining quality and value is a challenge for tea shops everywhere.

Weโve finally got a yellow tea on the shop!
For years, Iโve been looking to find a good yellow tea at the right mix of price and quality that would satisfy the many, many tea friends online asking for a yellow tea fix.
This Beigang Yellow Tea is that tea!
The flavor of Beigang Yellow is similar to green tea, but with a special tangy โdifferenceโ that makes it stand out. Similar to how lighter oolong teas can be like green tea โbut moreโ, this yellow tea also tastes like a green tea with a twist - though a different twist than oolong.
The flavor is sweet and smooth, with a bit of fermented funk and a fruity aftertaste. It combines the nice parts of a fragrant green tea with an extra twist of something extra that will be fun for experienced tea drinkers as well as people trying their first yellow tea.
For several years, I had many yellow tea samples, but I never committed to getting one for the site because they tended to be too expensive for how good they were. This yellow tea has โentry-levelโ pricing for a yellow tea, but the scent and flavor are, in my opinion, much better than entry-level quality.
Beigang, where the tea is from, is located in Hunan Province, and its yellow tea has been well known since the Tang Dynasty (618-907 AD). Grown at over 2000 meters of elevation, this teaโs famous fragrance has maintained its name in the Chinese tea world for over a thousand years.
