Sister Ai’s "Black Beauty"

Tea Year: 2022

Source: Qianjiazhai, Pu'er, Yunnan Province, China

Temperature: 85-90°C/185-194℉ 

Steep Time: First Steep (Wash): 5 seconds (6g of tea)

                    Gaiwan (120ml): 10-15 seconds (6g of tea)

                    Teapot (250ml): 15-30 seconds (8g of tea)

Steep #: 5-18 steeps in 120ml Gaiwan

Steeping Instructions:

Use one tea coin per serving. Pour hot water (85°C/185℉) to wash the leaves and enjoy the sweet and fresh aroma of the tea. Rinse the leaves for 5 seconds, then discard the water. Gradually increase steeping time with each brew. 

 

Sister Ai's Thousand-Year Tree Wild Red Tea

Steep #: 15 steeps in 120ml gaiwan

Steeping Instructions:

Use one tea coin per serving. Wash 30 seconds at 85℃/185℉ to open up the leaves. Enjoy scent and mouth feel. This tea has a softer, sweeter personality at 85℃/185℉ and a stronger one at boiling. It also responds well to long steep times without being bitter. Feel free to experiment!

 

Sister Ai’s Everyday Ancient Tree Shou Pu’er

Temperature: 90-100°C/194-212°F

Steep Time: First Steep (Wash): 5 seconds (5g of tea)

                    Gaiwan (120ml): 10-15 seconds (5g of tea)

                    Teapot (250ml): 15-30 seconds (7g of tea)

Steep #: 10-15 steeps in 120ml gaiwan 

Steeping Instructions:

Use one tea coin per serving. Wash 30 seconds at 100℃/212℉ to open up the leaves. Shorten steep time during middle steeps to taste and extend times during later steeps. Steep at a boiling temperature for the strongest flavor, or 90°C/194°F for a slightly smoother, sweeter flavor.

Steep #: 18 steeps in 120ml gaiwan

Steeping Instructions: 

Use one tea coin per serving. Wash 30 seconds at 90℃/194℉ to open up the leaves. Use 
90℃/194℉ water for sweeter tea, and boiling water for stronger tea. After 10-20 seconds, 
pour out the tea and enjoy. As the tea becomes weaker towards the end, extend the steep time to extract more flavor.

 

Sister Ai’s Everyday Ancient Tree Sheng Pu’er

Temperature: 95-100℃/203- 212℉

Steep Time: First Steep (Wash): 3-5 seconds (5g of tea)


                    Gaiwan (120ml) : 5-30 seconds (5g of tea)

                     Teapot (250ml): 10-45 seconds (7g of tea)

Steep #: 8-12 steeps in 120ml gaiwan

Steeping Instructions: 

Use one tea coin per serving. Wash 30 seconds at 95℃/203℉ to open up the leaves. Enjoy the fragrance of the tea. Steep the leaves again and adjust steeping time to taste. If the tea is too astringent, drop the temperature to 90℃/194℉ and lower the steep time to 5 seconds. Do not drink Raw Pu’er on an empty stomach.

 

Sister Ai’s Everyday Golden Pu’er

Temperature: 90-100℃/194-212℉

Steep Time: First Steep (Wash): 5-10 seconds (5g of tea)

                    Gaiwan (120ml):10-20 seconds (5g of tea)

                    Teapot (250ml): 10-20 seconds (8g of tea)

Steep #:12-14 steeps in 120ml gaiwan

Steeping Instructions: 

Use one tea coin per serving. Wash 30 seconds at 90℃/194℉ to open up the leaves. Enjoy the aroma of the tea. Then, slowly pour in hot water at 90-100℃/194-212℉. After 10-20 seconds, pour out the tea and enjoy. Enjoy the sweeter flavor and experiment with steeping time to your liking. As the tea becomes milder towards the end, extend the steeping times to draw out more flavor.

 

Sister Ai’s Everyday Ancient Tree Red Tea

                  Gaiwan (120ml) : 15-20 seconds (5g of tea)

                   Teapot (250ml): 30-45 seconds (7g of tea)

Steep #: 15 steeps in 120ml gaiwan 

Steeping Instructions:

Use one tea coin per serving. Wash 30 seconds at 90℃/194℉ to open up the leaves. Replace the gaiwan or pot lid without adding more water for 30-60 seconds, to allow the leaves to steam and open up further. Feel free to drink the wash steep if you would like, or discard it. Enjoy the scent and mouth feel. This tea has a softer, sweeter personality at 90℃/194℉ and a stronger one at boiling.
